Udon is made from wheat flour and salt. The thickest of all Japanese noodles is Udon, hugely versitale and maintains a firm texture compared with other brands. The Udon noodle is suitable for more hearty dishes, especially Stir Fry and Soup.

Cooking Instructions: Boil for 10 minutes. If stirfrying boil for 8 minutes (noodles will receive extra cooking in the wok).

Organic Soba is a medium flat noodle with a brown colouring that is brought about by the inclusion of Buckwheat flour. This also adds a wonderful nutty taste and texture that works well whether they are dipped cold into a simple dipping sauce or added to a more elaborate hot dish.

Cha Soba noodles are Soba noodles made of buckwheat flour (soba-ko) and wheat flour (komugi-ko) with the added ingredient of fresh Green Tea leaves (Ryokucha or Ocha). In Japan Cha Soba is considered a delicacy and is only consumed on very special occasions.

Cha Soba is packed in a light-proof foil packaging to protect the nutritional value of the tea which begins to degrade when exposed to oxygen or light and to keep the fresh flavor of the green tea.

Ramen is a white noodle with thicker texture, suitable for more hearty dishes. Made from organic soft wheat, it is high in adhesiveness and elasticity with a pleasing texture.

Ramen noodles originated in China and are called "Lo-Mein" in Chinese, which means boiled noodles. "Ra-men" is the Japanese pronunciation of the Chinese Characters for Lo-Mein. Japan has now adopted Ramen as its own and it is immensely popular, especially amongst younger people.
